Cumberland sausages may soon be protected by European law By Nigel Bunyan 4: Thousands of people make what purports to be a Cumberland sausage, but no more than a few dozen adhere to the artisan style handed down through the generations since the 16th century. These now want the European Union to rule that only truly authentic produce should bear the label “Traditional Cumberland Sausage”. The Department of Food and Rural Affairs is due to submit an application for protected status “within weeks”, with a final answer expected late next year.
The original recipe called for a mixture of meat from the now extinct Cumberland pig, salt and black pepper, and the likes of marjoram, sage, and even apples. This was wrapped in a casing made from the pigs’ own intestines and thereafter hung, allowed to dry over a period of months, and then boiled. When the Cumberland pig became extinct in producers turned to other traditional breeds.
Mr Davies, from Crosby-on-Eden, is among a band of aficionados who have tried to adhere to the traditional ways. He originally made sausages for friends and family before eventually setting up his own company. Peter Gott, a Cumbrian pig farmer and butcher, said: The Cumberland campaign was inspired by a year battle by the producers of Melton Mowbray pork pies.
They finally won protected geographical status last month. As long as no other European member state objects before October 4, the pork pie will be protected for good.
